  • 1 Lebanese pita bread split
  • 2 tbsp labneh or plant-based cream cheese
  • 2 tsp harissa
  • 1 cucumber sliced
  • 1 tomato sliced
  • 6 olives pitted
  • 1 tbsp za’atar
  • 1 tbsp olive oil



  • Preheat your oven to 180°C (350°F).
  • Wash the cucumber and tomato, then slice them. Set aside along with pitted olives.

Bake the Pita Bread

  • Take one half of the pita bread and apply some olive oil and sprinkle za’atar on the rough side.
  • Place it in the preheated oven and bake for 2-5 minutes or until it turns golden and crispy. Monitor to avoid burning.

  • On the unbaked pita half, smooth side down, evenly spread the labneh or plant-based cream cheese and harissa. Neatly place the sliced cucumber, tomato, and olives over the harissa.
