Instructions
1. Preheat the oven to 200°C (400°F).
2. Cut the tops off the garlic bulbs and shallots. Drizzle them with olive oil, then season with salt and pepper. Wrap in foil and roast for 45-60 minutes, until soft and fragrant.
3. Once roasted, remove from the oven and let them cool slightly. Squeeze the roasted garlic cloves and shallots into a bowl, discarding the skins.
4. Add the softened butter, sun-dried tomatoes, and chopped basil to the bowl. Season with salt and pepper, then mix well to create the garlic butter mixture.
5. Slice the baguette in half lengthwise and spread the garlic butter mixture evenly over both halves.
6. Sprinkle the vegan cheese evenly on top.
7. Place the bread on a baking sheet and bake for 10-20 minutes, or until the cheese is melted and golden brown.
8. Remove from the oven, garnish with chopped parsley and chili flakes, then slice and serve warm.
