Ingredients
  

  • 6 large Onions sliced
  • 4 cloves Garlic minced
  • 2 tbsp Olive oil
  • 2 tbsp Vegan butter
  • 1 tsp Sugar
  • Thyme to taste
  • 2 Bay leaves
  • 2 Vegetable broth cubes
  • 2 cups Water
  • 2 tbsp All-purpose flour
  • 2 tbsp Worcestershire sauce make sure it’s vegan
  • Salt and Pepper to taste
  • 8 slices Baguette bread
  • 1 1/2 cups Shredded vegan cheese

Instructions
 

  • Prepare Onions: In a large pot, heat the olive oil and vegan butter over medium heat. Add the onions, sugar, and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are caramelized.
  • Add Herbs and Garlic: Stir in the garlic, thyme, and bay leaves. Cook for an additional 2-3 minutes.
  • Thicken Soup: Sprinkle the flour over the onions and stir well to combine. Cook for another 2-3 minutes.
  • Prepare Broth: Add the vegetable broth cubes, water, and Worcestershire sauce to the pot. Stir well and bring the mixture to a boil. Reduce heat and let it simmer for 10-15 minutes.
  • Season: Remove the bay leaves and season with salt and pepper according to your preference.
  • Assemble and Bake: Preheat the oven to 400°F (200°C). Ladle the soup into oven-safe bowls, top with toasted baguette slices and sprinkle shredded vegan cheese over the bread. Place the bowls on a baking sheet and bake for 5-7 minutes or until the cheese is melted and bubbly.
  • Serve: Enjoy your Vegan French Onion Soup hot, garnished with additional thyme if desired.

Notes

Make sure the Worcestershire sauce you use is vegan, as the traditional version often contains anchovies.
You can use any vegan cheese that melts well for the topping.
For an extra touch, you can also garnish with fresh chives or extra thyme.
